THEHotel de France, in the historic center of Auch is your base for the night. Former Relais des Postes from the XNUMXth century, its walls are steeped in history. André DAGUIN has given its letters of nobility to this house now recognized by gastronomes.

At 10:30 am, your meeting point is set at Saint-Jean-Poutge at Domain of Herrebouc to join the discovery tour (duration 1h30 in the presence of other people). Carine and Hélène present the historic site of the castle of Herrebouc to you. Together you move to the winemaking cellars and learn more about this certified organic wine estate and its 18 hectares of vines. The organic winemaking process and the artisanal practices of the vat room right up to the wine cellar aging in barrels are explained to you. Comfortably seated, the commented wine tasting (range composed among others of wine for aging) begins. You are won over! Before leaving, take a look at the mill where the peaceful Baïse river flows and feel the bucolic atmosphere of the place ...
At 15 p.m., you have an appointment at Grand County Estate in Roquelaure with Michel, or perhaps Aurélie (surprise!), for a private guided tour (duration 2 hours). At the estate, nine generations of the Baylac family have succeeded. The vineyard is part of the Haut-Armagnac terroir. It is cultivated according to the principles of sustainable agriculture, respectful of the environment. As soon as the door to the reception area is pushed open, the smells of wine and wood from the old cellar arouse your senses ... Here you will discover the history of the estate, the work of a winegrower, the cellar and you will taste the famous Floc de Gascogne.
Then, the height of the visit approaches: you learn the recipe for firebrand and attend thealchemy of this tradition… You are ready to reproduce the recipe at home, to wow family and friends.
