In Auch, in the heart of Gascony, stands the Domaine de Baulieu. This old farmhouse, typically Gersoise, has been restored and transformed to offer a setting that combines the traditional with the contemporary, in the heart of the countryside. This haven of nature and tranquility is home to a **** hotel with 29 rooms, two reception rooms and a gourmet, elegant and friendly restaurant.
Two chefs Maxime Deschamps and Stéphane Mazières united by the same passion, will fill you with their desire to highlight fresh and local products, in order to offer you a tasty and aesthetic menu.
For Maxime, cooking has become a vocation from the age of 10. He learned his trade at the Quercy hotel school, then began a tour of France in prestigious and often starred establishments. In 1994, he flew to the island of Saint Barthélemy, to run the kitchens of Toiny **** for 13 years, where he was awarded numerous prizes including "Grand de Demain" by Gault and Millau. There, he meets his friend and acolyte in the kitchen: Stéphane Mazières. Back in France in 2010, he was in charge of the kitchens of Château de Mirambeau ***** and obtained the star in the Michelin guide.
Stéphane Mazières, meanwhile, returned to France in 2014. He took the reins of another prestigious establishment in the Gard: the Castellas. There, he took up the challenge brilliantly.
In 2017, looking for new challenges and motivated by the desire to work with quality local products, the duo decided to take charge of the kitchens of the Domaine de Baulieu restaurant.
They will offer you classic French cuisine, with new textures and techniques to modernize it.
As you stroll around the Domaine de Baulieu, you can even discover the restaurant's vegetable garden, a guarantee of quality and flavors.
In fine weather, the large bay windows opening onto the estate offer an ideal setting for outdoor dinners and convivial events. The atmosphere will be totally different in winter with a warm and cozy atmosphere in a setting combining contemporary and authenticity.
