Taken over by the employees in the form of a cooperative, Fumaison Occitane develops a fish smoking activity in the traditional way. They come from Scotland or the South-West (Ariège and Dordogne). The primary objective remains to offer quality and top-of-the-range products, starting with a selection of suppliers according to criteria based on the farming method and food, then by dry salting and smoking with beer wood. .
